Last night, I turned to trusty Pinterest for some dinner inspiration and decided to make a chopped sausage, cut up potato, string onions and string bell pepper and banana pepper creation. There was no name tagged along to the recipe so I have decided to call it MVP (meat, veggies, potato). My creativity amazes me sometimes.
So here’s what you need:

It came out fantastic! Nom Nom Nom.
So here’s what you need:
- Johnsonville sausage: (You can substitute for any meat. Next time I may try linguica.) I used 3 packages of the original Johnsonville sausages and it fed me and 3 very hungry loved ones.
- Package of small red potatoes: There were probably around 15 potatoes in the package.
- 1-2 Green Bell Peppers
- 1 Large Onion
- 1 Jar of Banana Peppers: I got a small jar, next time I will get the large. I love me some banana peppers.
- Salt and Pepper
- OLIVE Oil
- Italian Seasoning (if desired)
Okay, now do this…
- Preheat the oven to 400 degrees.
- Get two large flat baking pans and spray that down with non-stick spray (I put aluminum foil down on the pan and then sprayed).
- Cut up the onions and bell peppers into strings.
- Cut up the sausage in ½ inch pieces.
- Dice up potatoes into 1 inch pieces.
- Put all ingredients onto the baking pan and drizzle with olive oil. Use hands and mix everything together to make sure everything gets coated with oil.
- Shake on some salt and pepper and if you want (which I highly recommend) add some Italian seasoning. It was a great addition to the sausage flavor. I’m not sure how it would be with linguica or kielbasa but for the sausage it was a great addition.
- I then distributed the banana peppers on top of everything and baked at 400 degrees for 40 minutes.
