I decided to utilize my beginner-level cooking skills to make Three Cheese Chicken Roll Ups last night and they were pretty pretttaayyyy good. Let’s get to it…
Here’s what you need kiddos…
Ricotta Cheese
Spinach
Olive Oil
Garlic
Salt and Pepper
Parmesan Cheese
Thinly sliced chicken breast
2 eggs
Breadcrumbs
Mozzarella Cheese
Marinara sauce
Basil
Now do THIS....
1. Preheat your oven to 450 degrees
2. In a pan on the stove top drizzle some olive oil and add in 2 garlic cloves (minced) and 3 cups of spinach
3. When they are wilting from the heat, add 1 cup of ricotta cheese and ½ cup parmesan cheese in. Mix all together until the cheese is melted and everything is mixed in together
4. Crack two eggs and take a fork and mix them together until its yellow (you will be using this to coat the chicken)
5. Take a piece of the chicken and top both sides off with salt and pepper
6. Take a spoonful of the spinach/cheese/garlic mix and place on the chicken and then roll it up so the mixture is in the middle.
7. Dip the chicken in the eggs to coat it
8. Then sprinkle on/dunk the chicken in the breadcrumbs.
9. Repeat for the rest of the chicken breasts
10. Bake for 25 minutes at 450 degrees
11. Take the pan out and spoon some marinara on top of each chicken and then add a slice of mozzarella over it.
12. Bake for another 5 minutes
13. Take the pan out and throw on some fresh basil over your creation and then have at it!
*** Side Note*** my version did NOT have basil because apparently my home town is going through a basil epidemic; there was none to be found!
I made some asparagus and shells with my chicken. For the asparagus I coat it with olive oil, salt and pepper, and garlic powder and then bake for 15-20 minutes. So simple to make yet soooo good.
No one died after eating it (thank god), in fact they loved it! Another attempt to achieve my goal of being the ultimate housewife someday was a success.
